Three of my favourite things!
Burrata it is a perfect blend of textures. A soft mozzarella shell, encasing a beautiful creamy centre of mozzarella strings and cream or, in my case, homemade mascarpone. Learn to weave and pull the pliable curd till it is silky smooth then form it into a soft pouch before filling it with the stretched curd mixture then sealing the top to form a cheese money bag. The Burrata once made will be enjoyed with crusty bread, tomatoes and basil when in season and served with a complimentary glass of bubbles.Then: Cultured butter made from fresh cream. Some on the butter we will flavour with either garlic, chives or other herbs from the garden, or a little truffle when available/in season.The workshop runs for approximately 1 ½ hours with an extra half hour to relax and enjoy your bubbles and cheese.Tastings included.

In 774 the French Emperor stopped at the priory and discovered the cheese it pleased him so much he asked for regular deliveries to his castle in Aachen. Hence the cheese was known as the king of cheese. This cheese when young can handle strong rich mature reds, it also pairs well with wines that have a slightly nutty flavour. As the cheese matures, chardonnay and bubbles are a good companion.Your nose and palate can tell you a great deal about the flavour and aroma of a cheese. The cheese is best served at room temperature and the wine not to cold. The flavours vary between pleasant, clear, fresh, sweet, sour, while mouldy, grassy, ammonia and even barn like characteristics are found in some cheeses. Lyndall, the home cheesemaking guru, is back sharing her passion for all things cheese in her newest venture - Artisan Cheese & Cooking School. She'll take you through the step by step process of creating your own squeeky haloumi and creamy persian fetta, all from a saucepan. You'll start by using fresh local Norco milk, adding some simple ingredients and watch the cheese magic begin!Traditionally both Haloumi and Fetta are made using a blend of sheep and goats milk, for convenience we'll be using cows milk for both recipes. As a bonus, after you've finished making Haloumi, you'll use the leftover whey to make fresh ricotta! Tastings included.

Taste the beauty of a Tuscan wood fired pizza made from scratch and topped with freshly made mozzarella all made by you.
Being passionate about all things food, Lyndall loves sharing her knowledge of making food from scratch, her kitchen is filled with laughter as class participants, knead, prove, roll and dock the dough for the perfect pizza base. Then warm the milk to set the curd for mozzarella, who ever said, don’t play with your food, has obviously never made mozzarella. This cheese is fun food to make, stretching folding, stretching folding until the curd is shiny, silky and smooth. Perfect for hand shredding to top the pizza’s.
