Dressing
- ¼ red onion
- 50 g fetta
- Juice of ½ lime
- ½ tsp jalapeño chilli (or to taste)
- 2 dessert spoons mayonnaise
Sourdough Crumb
- Crumb from a small sourdough loaf or a few slices of leftover bread
- Olive oil
- Salt and pepper
- A pinch of garlic (powder or fresh)
To Serve
- Cos lettuce
- Edible flowers or finely chopped chives, to garnish

Method
- Make the sourdough crumb:
Remove the crusts from the bread and tear into small pieces. Toss with a drizzle of olive oil, salt, pepper, and garlic until lightly coated. Spread onto a tray and bake in a moderate oven until golden and crisp. Set aside to cool. - Prepare the dressing:
Place the red onion, lime juice, jalapeño, mayonnaise, and fetta into a small food processor. Blitz until smooth and creamy. - Assemble:
Cut the baby cos into quarters and arange of serving platter. Drizzle the dressing over crisp cos lettuce, scatter generously with sourdough crumb, and finish with edible flowers or chives.
