· 250g Ricotta (for extra creaminess, add 100ml of creamto every litre of milk when making your own) Or use creamy store broughtricotta.
· 100g Finely diced red and yellow capsicum
· 100g Finely diced red onion
· 100g Finely diced mixed fresh tomato
· 75g Finely diced Kalamata olives
· 50ml Caramelised balsamic glaze

Method
Blend the ricotta until smooth and creamy, then spread onto a serving platterin the shape of a log. Toss together the capsicum, onion, tomato, and olives,and spoon this colourful mix over the top. Drizzle generously with caramelised balsamic.
Serve with crusty bread, aglass of wine, and plenty of laughter.
