Pickled Grapes

A wonderful way to preserve grapes for later use on your cheese platters. These pickled grapes are sweet with a gentle spice and are best served chilled. They make the perfect accompaniment to your homemade blue cheeses.

Ingredients

800g crimson grapes

1.5 cups of water

40 ml white wine vinegar

40 g of sugar

3 cinnamon quils

6 star anise

Method

Remove the grapes from the stalks, discarding any damaged fruit.

Place the grapes into a saucepan along with the remaining ingredients. Gently heat over low heat, stirring until the sugar has completely dissolved.

Increase to a gentle simmer and cook for approximately 30 minutes, or until the liquid has reduced and the grapes have softened.

Allow to cool slightly, then transfer to an airtight container, ensuring the grapes are fully covered by the pickling liquid. Store in the refrigerator for several weeks.

Serve alongside your homemade blue, Brie, or any cheese of your choice for a delicious sweet and tangy accompaniment.
